For example, and completely consistent with reality, a mud pit could be 99 percent mud but, due to a recent, or even concurrent rain, there might be patches of water and patches of mud. The fact of being almost all mud would become more apparent as the victim struggles and stirs things up.

I think a good example of this would be the "Incredible Hulk" scene with Bill Bixbey/Lou Ferigno. You couldn't see the qs at all at first because of the water and leaves, but as soon as it got good and stirred up, the mud looked great.
And, if I may be so bold, I tried my own take on this a few years back, here:

Indeed, and I have probably contributed quite a few myself. When one is doing a shoot with a production goal of five scenes a day for two, or even three, days, one pretty much has to keep going when it rains, or right after the rain has stopped. While my pits have overflow systems, those do not always work all that well, with the result that there will be puddles of water on the mud until it gets mixed in.

I dunno about fiction per se, but I firmly believe that quicksand (or other types of mire) under some water is a very real thing.

One of my favorite play spots back in the day was a pond that was basically muck with about 4" of water covering it. The oozy muck was brown. The water was warm. The muck (which also bubbled btw) was warm. Good times.

There are at least a half dozen mainstream scenes out there featuring underwater quicksand. A couple of them work. Not because the stuff gets churned up, but rather by the acting involved. I understand that visually, the tactile aspect of quicksand in those scenes doesn't deliver. But as far as quicksand as a threat goes, they can deliver that quite well.

During my adventures, I have come across numerous places with deep mud beneath the water. My Crescent Road pond itself has a bottom consisting of the same mud that swallows me numerous times on shore. Also, early in the season, my bog is always under a layer of water, which is why I have to wait until mid to late summer before it finally becomes exposed. All of MPV's Canadian locations had the same deep mud under the nearby water as what the models sank into onshore.
I sink, therefore I WAM!!!!

Probably the hardest work I ever did was in Illinois, slogging through the slurry ponds with 1 or 2 feet of water on top. There were a couple of minor "Oh Shit..." moments there. Water on top is definitely very real and kind of scary when you know it's bottomless stuff underneath.
It's a dirty job but I got to do it for 27 years. Thank you.
